Note: Michael Marcus apprenticed in Japan for four years under master potters and kiln makers and he learned how to build his wood-fired Bizen Nobori Gama kiln which is named after the Japanese town of its origin, where unglazed ware called yakishime has been produced for over 1,000 years. He is now proprietor and head sushi chef of Bizen Gourmet Japanese Restaurant, and Bizen Kaiseki in the Berkshires.
